Three Tails Brewery in Mudgee is looking for an experienced cook to take ownership of our kitchen and help us develop the next chapter of our food offering.
We're not particularly interested in job titles or pieces of paper. We're interested in finding someone who loves cooking, knows how to run an organised kitchen, enjoys leading a small team and has some ideas of their own.
We already have a solid, established food offering but we'd love the next person to put their own stamp on it.
Think of it as: here's a good starting point – now make it yours.
We want someone who can maintain the consistency and quality of our existing menu while also bringing fresh ideas to the table. New dishes, weekly specials, seasonal changes or a completely new idea we haven't thought of yet – we'd genuinely like to hear them.
The person we're looking for
You'll have good experience working in a commercial kitchen, but you don't necessarily need to be a qualified chef.
More important to us is that you're:
Calm and capable during a busy service
Organised and reliable
Proud of putting out consistently good food
Comfortable ordering, provisioning and managing stock
Able to plan and organise prep efficiently
Happy to take responsibility for kitchen rostering and staffing
A genuine team player
Someone who enjoys teaching and developing younger staff
Creative enough to help us keep developing our food offering
Comfortable taking ownership and getting on with the job without someone constantly looking over your shoulder
You'll inherit a small, enthusiastic young kitchen team ready for you to mentor and train and you can also build your own team around you.
The hours
This isn't a traditional chef job involving breakfasts, split shifts every day and finishing late at night.
Our main kitchen services are Wednesday and Thursday evenings, Friday lunch and dinner, and Saturday lunch and dinner. Sunday is a short, reduced lunch service which can generally be covered by other members of the team.
Our kitchen finishes at 8pm.
There are of course additional hours throughout the week for fod prep, ordering, rostering, stock management and menu development.
We envisage the role being approximately 30-35 hours per week, but we're flexible. For the right person, we're very happy to sit down and work out an arrangement that works for both of us.
Most importantly...
Three Tails is a small independent brewery in a country town. We're not trying to build a fine-dining restaurant and we're not looking for someone who wants a fancy title.
We want to continually provide really good, interesting, approachable food that people want to come back and eat again.
